
Quick and easy is the name of the game for me nowadays. Healthy-ish is what I strive for as well, but there must be balance. Anytime I can get dinner on the table in about 30 minutes, I'm ecstatic.
I saw this recipe for honey soy sticky chicken, and I was intrigued because it only required 5 main ingredients, and spices you might already have in your pantry. It came together so fast and my family loved it. It has now been added to the menu, and welcomed into the rotation. It's simple enough my grown daughters can do it, and hopefully they will help a mother out, and take on more of the cooking duties one day. A girl can wish can't she. Give it a try and tell me what you think.

Honey Soy Sticky Chicken
Ingredients:
1 pound boneless skinless chicken thighs
3 Tblspn olive oil
¾ cup soy sauce
1 cup honey
2 Tblspn minced garlic
3 Tblspn cornstarch
1 Tsp pepper
1 Tsp garlic powder
1 Tsp paprika
Salt

Directions:
1.  Mix together cornstarch, pepper, garlic powder and paprika in a bowl. Set aside.
2.  Combine honey and soy sauce in a bowl. Stir together and set aside.
3.  Dice up chicken thighs and sprinkle with a little salt.
4.  Add cornstarch mixture to chicken and mix together to coat.
5.  Heat up olive oil in pan.
6.  Once oil is hot, add chicken and cook for about 4 minutes. We do not want the chicken completely done yet.
7. Drain any excess oil and add garlic to the chicken. Give it a quick mix and add in honey soy mixture.
8. Mix together well and cover with lid.
9. Put heat on low and cook for about five minutes or until chicken is done and sauce has thickened.
10. Serve sticky chicken over rice and with a green vegetable.

*Now, when I say I like to keep things healthyish most times, you also have the option to use a leaner piece of chicken (chicken tenders) here or even shrimp. The adjustment I would make would be to cook the meat first, and prepare your sauce separately, then combine them so you don’t overcook your meat. What’s your quick and easy weeknight meal?
