Quick and Easy Fajita Chicken Bowl Recipe for Your Busy Weeknights

Ingredients:
For the Chicken:
Chicken Tenderloins (I use approx 4 pounds)
Taco seasoning packet
Olive Oil
For the Vegetables:
1 Green Pepper
1 Red Onion
Olive Oil
For the Rice:
Jasmine Rice
Olive Oil
Salt
Lime Juice
Cilantro
Additional Topping Ideas:
Cheese
Taco Sauce
Guacamole
Sour Cream
Directions:
This fajita chicken bowl has a few steps, but it’s so easy and comes together in no time. You can save yourself some time in the kitchen by doing some prep work like chopping and seasoning the chicken, and chopping the veggies the day before. Your future self will thank you.
Start by chopping up chicken tenders into bite-size pieces and seasoning with your favorite taco seasoning.
Heat skillet on medium high with olive oil. Cooking batches about six minutes or until done (165 degrees internally).
While chicken is cooking, chop your veggies and set to the side.
Finish cooking chicken and set to the side. Using the same pan, add a little olive oil and cook veggies until soft and tender. Remove from pan and set aside.
Measure out rice and cook according to directions using olive oil. Once finished cooking, remove from heat, and toss with lime juice, salt, and cilantro.
Prepare your bowl with rice, chicken and veggies. Next, layer on your desired toppings. I enjoy mine with taco sauce, sour cream, guacamole, and shredded Mexican cheese. Give it a little mix and enjoy.
