
Now, you all know how much I love my blueberry compote. In fact, I use it almost daily on top of my oatmeal, but when I had some strawberries I didn’t want to go to waste, I figured I’d try making a simple strawberry compote.

I only used four ingredients for this strawberry compote recipe, and it came together quickly because I wasn’t working with a lot. Next time, I’ll try my hand with a whole container of strawberries just to have more available. All you do is add your cleaned and chopped strawberries to a pot along with a little vanilla, lemon juice, and maple syrup. I used maple syrup as my sweetener instead of sugar, but you can use sugar if you prefer. In fact, I plan to try it without any additional sweetener one time, just to see what happens naturally because I do try to limit my sugar intake most days.

Stir everything together and cook on medium until it starts to cook down. Once things soften up, I used a masher to break it down a little more. This small batch came together in about 10 minutes, and I stored it in an airtight container in the fridge. You can use this strawberry compote recipe on waffles, ice cream, and so much more, but I’m sure you already know I’m putting this on top of my greek yogurt. Strawberry Compote
Ingredients:
Strawberries, cleaned and cut up
Tsp Vanilla
Tsp Lemon Juice
Tblspn Maple Syrup

Directions:
1. Add all ingredients to pot and cut on medium heat.

2. Stir consistently until strawberries start to breakdown.

3. When strawberries are soft, use a masher to mash up.
Â
4. Check consistency and remove from fire.
Â
5. Add to favorite dish or let cool and store in airtight container until ready to use.
