I enjoy a good egg roll. One of my favorite Chinese food places when I was growing up had the absolute best egg rolls, and to this day, I haven’t found one like it. Well, when I saw this copycat version of The Cheesecake Factory Tex Mex egg roll recipe, I was intrigued. I know it’s a different flavor profile, but I was looking for a healthier option, than the deep fried egg roll I was used to.
I was excited about the veggies, the southwest flavors, and the fact I could make this dish pretty quickly by using a rotisserie chicken. To make things even better, I chose to air fry instead of deep frying to cut down on those bad fats. Just combine all of these ingredients and start rolling. Add a green veggie and some Santa Fe dipping sauce, and let me know what you think.
Recipe Adapted from: Dinner Then Dessert
Ingredients:
1 tablespoon olive oil
2 cups rotisserie chicken, diced
1/2 yellow onion, diced
1 tablespoon minced garlic
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon kosher salt
1 cup black beans, drained
1 cup corn
1 green bell pepper, diced
1 Roma tomato, diced *
1/2 cup shredded cheddar cheese
2 tablespoons chopped cilantro
1 package egg roll wrappers (I love the Nasoya brand)
Directions:
1. Add olive oil to pan then add onion, garlic, cumin, chili powder, and kosher salt.
2. Cook for one minute, then turn off heat.
3. Combine chicken, corn, black beans, bell pepper, tomato, cheddar cheese, cilantro, and mix together.
4. Place about 2 tablespoons (use your judgment) of mixture into egg roll wrapper and rolled tightly.
5. Once all egg rolls have been made, brush with a little olive oil.
6. Place in air fryer on 375° for 10 minutes or until golden brown. Flip over and air fry for 10 more minutes, or until done.*
7. Remove from air fryer and let cool. Serve with your dipping sauce of choice and a veggie.*
*Notes:
1. I make this process easier by cutting a few steps and making simple swaps. The original recipe calls for chicken to be prepared, but I grabbed a rotisserie chicken to make my job faster. Also, lately I’ve been using petite diced tomatoes instead of dicing a Roma tomato. Just make sure you drain them.
2. Air fryers vary and since these ingredients are already cooked, when you add them to the egg roll wrappers, they may not take as long in the air fryer. Use your best judgment.
3. A lot of Tex Mex egg rolls call for an avocado style dipping sauce, but my family and I really enjoy this Santa Fe dipping sauce with this recipe.
4. This recipe is easy to double which I do every time. Store leftover mixture in an airtight container and roll up the next day.
